AC-AP (Ascorbyl Palmitate) is an oil-soluble derivative of vitamin C, but it is more stable than vitamin C. 


It has been widely used as fat-soluble antioxidant, health care raw material, cosmetics raw material and pharmaceutical excipient. 


It also an antioxidant of choice for infant food - The world's first antioxidant that can be used in infant formula (milk powder).

Q1:What is its main role in food?


A1:Its core role is that of an antioxidant and nutrient fortifier.

Antioxidant: Prevents the oxidation of oil-containing foods, which leads to rancidity (producing a rancid taste), discoloration, and nutrient loss. It effectively neutralizes free radicals and protects foods with high oil and fat content.

Nutritional fortification: In the body, it can be broken down into vitamin C and palmitic acid, thus exerting the physiological and nutritional function of vitamin C.


Q2:How is it used in food production? What is there to be aware of?


A2:It is usually added directly to the grease and dissolved by stirring. Note: 

Add in advance: It should be added before the beginning of the oxidation process in order to have the best preventive effect.

Synergistic effect: It is more effective when used in combination with Vitamin E , which can regenerate each other to form a highly efficient antioxidant circulatory system.

Avoid high temperature processing: Although it is thermally stable, it should be avoided for a long period of time in order to avoid partial failure.
